1915 – Over 600 people are killed in Guadalajara, Mexico, when a train plunges off the tracks into a deep canyon.
Around January 22, 1915,
a special train of twenty cars left Colima.
It was packed, with people even clinging to the roofs and undercarriages.
Somewhere between Colima and Guadalajara the engineer lost control
on a long steep descent.
As the train gathered speed many people were thrown off as the train negotiated curves.
Eventually the entire train plunged off the tracks and into a deep canyon,
with fewer than 300 of the 900 on board surviving the disaster.
Some of Carranza's troops, Yaqui Indians committed suicide
when hearing of the death of their families.
Others swore vengeance on the train crew;
but they had also been killed in the disaster.

The library is of especial importance for sometimes having preserved the only copy of a work,
such as happened with Beowulf and Sir Gawain and the Green Knight.

Paso 1: Selección de Ingredientes y Peso.

… la sal
…  El agua filtrada
para elaborar tu pan
… Una buena masa tendrá una temperatura aproximada de 24° C.
… pesar… todos… los ingredientes (incluyendo los líquidos) en gramos en una báscula.  Pesar es mucho más fácil que calcular en volumen.

Paso 2: Mezclar
Existen dos etapas en el proceso del mezclado de los ingredientes:
la primera es incorporar los ingredientes
y la segunda consiste en darle una forma a la masa.
La mezcla puede ser amasada a mano o con una batidora.  
Si decides usar una batidora,
mantén la velocidad lo más baja posible para no dañar el motor.

Paso 3: Fermentación Primaria.
...- es cuando la levadura comienza a hacer su trabajo,
convirtiendo el azúcar en bióxido de carbono, alcohol y ácidos orgánicos.
Cada masa tiene un tiempo diferente de fermentación, todo depende de su fórmula.

Paso 4: Dividir y dar forma.
Cuando la masa está correctamente fermentada,
es el momento de dividirla y darle forma.
Esto…  ayudará a... lograr... y conseguir... el tamaño y forma final del pan... de una manera más fácil.

Paso 5: Reposo.
Después … se deja reposar antes de darle su forma final.  
El reposo de la masa ha de ser de entre 15 a 20 min aproximadamente
y durante ese tiempo,
el gluten de la mezcla, el cual se ha vuelto elástico durante el amasado,
se relajará y se podrá manipular más fácilmente.

Paso 6: Forma Final.
Existen cuatro tipos básicos de la forma del pan:
la baguette (larga),
la boule (redonda),
la bâtard (forma de balón de football)
y la hogaza de pan (bâtard sin las puntas).
Después de darle forma, la masa debe dejarse reposar.
Para las baguettes y bâtards, las dejamos reposar en mesas de madera;
para las boules, usamos canastas de madera y lino,
… Las canastas ayudan a mantener la forma final del pan durante la fermentación final.


Paso 7: Fermentación Final.
Después de darle la forma final, la masa debe reposar y terminar de fermentar.
El tiempo de fermentación dependerá del tipo de la masa;
podría ser desde 15 minutos hasta 12 horas.  

Paso 8: Cortes o Marcas
La mayoría de las hogazas tienen un corte o marca distintiva,
se le hace justo antes de ser horneadas.
Los cortes tienen una función decorativa,
y le permite a la masa abrirse extenderse adecuadamente  
justo cuando el bióxido de carbono  
que se ha acumulado durante la fermentación se expanda en el calor del horno.
Las marcas en las hogazas son hechas generalmente con una cuchillo.

Paso 9: Horneado.
Masas sin contenido en grasas
(tales como las baguettes  y pan con levain hechos sin grasa, azúcar, huevos, etc.)
son comúnmente horneados en temperaturas altas, alrededor de 450-475°F.  
El pan enriquecido o con grasa  (brioche, challah, pan dulce)
es normalmente horneado a  350-400°F.  
En la mayoría de los casos,
una hogaza pequeña debe ser horneada a una temperatura más alta
que la de una hogaza más larga y esto afectará en la correcta coloración de la misma.  
Hay algunos indicadores que ayudan a determinar si la hogaza esta bien horneada
—por su color, por el sonido hueco que escuchas cuando golpeas el centro de la hogaza,
y por la temperatura interna
(al menos 190°F para pan sin grasa, 165°F para pan enriquecido).


Paso 10: Enfriamiento.
Aunque sea una tentación comer el pan justo después de horneado,
no es la manera más adecuada de apreciar todos los sabores del pan.
Cuando el pan sale del horno, aún tiene mucha humedad y dióxido de carbono.
El pan necesita tiempo para enfriarse para que la humedad y el gas se disipen.
Después de enfriarlo, la textura, sabor y el aroma del pan
se habrán desarrollado... para disfrutar.
